Wheat Grinders - Types, Prices, Usage, Recommendations

If you are anything like me, the idea of buying, let alone actually USING a wheat grinder can be pretty intimidating. I am determined to accumulate a healthy-sized food storage and wheat is going to play a big role in that. I am also a fan of the mantra "store what you eat and eat what you store". Thus it quickly became apparent to me that I needed to do some heavy duty research in order to uncover all the mysteries surrounding "wheat grinders" or "grain mills" as they are officially called. With the help of internet research, some hands on research at several neighbors' houses, and multiple failed attempts in the kitchen, I have come up with a pretty good summary of what you need to know.

Prices of Wheat Grinders

Manual Wheat Grinders

Low: -30 models will not grind flour, only coarse corn meal, etc. Not very useful. Medium: -5 is a good price range. Back to Basics Grain Mill is . It can grind fine enough for bread flour but not for very fine cake flour. Wonder Junior is higher-priced at 9 but it can grind into cake flour. High: Up to 0 for the Country Living Grain Mill. It is quicker than other manual grinders and is able to grind a fine cake flour.

0-120, some may be used on any stand mixer.
Electric Wheat Grinders

Low: Under 0 for grinders such as the Blendtec Grain Mill. Its drawbacks are it is very noisy and cannot do very coarse grinds. Medium: 0-0 can get you a great grinder. The two most popular electric grinders are the WonderMill and the NutriMill. In my tests I found the WonderMill to be faster, quieter, cleaner, and easier to store. And priced at 9 it is even cheaper than the NutriMill which is 9. High: Over 0 is an unnecessary amount to spend in my opinion. There are heavy duty models out there but you can get the job done with the mid-range models.
How To Use Wheat Grinders

Attach wheat grinder to your counter top Place a bowl underneath Pour the wheat in the funnel Turn the crank (for a LONG time) Wheat will filter into the bowl below
Electric Wheat Grinders

Select how fine or coarse you want to grind Turn on the machine Pour the wheat in the top Wait for it to grind into flour (super fast) Turn off the machine and pull out your canister of wheat
How To Use Fresh Ground Whole Wheat

Whole wheat bread can be delicious! I have gone through a lot of recipes trying to find the perfect balance of flavor, nutrition, texture, etc. for my wheat bread. Experiment with different recipes and types of wheat until you find what your family prefers. We liked using hard white wheat in a recipe that included gluten and oatmeal. Pancakes even your kids will love! I took an IHOP corn cakes recipe and simply swapped all-purpose flour for whole wheat flour and it was amazing. My kids ate 3 each at one meal. They are delicious drizzled with honey over top. Whole wheat oatmeal cookies you can't resist. I haven't tried any of these recipes yet but several of my friends said they prefer whole wheat cookies to regular cookies. Who wouldn't want an excuse to make cookies, hey it's rotating your food storage. Much much more. I grind up a large Tupperware full of hard white wheat flour and store it in my freezer (it retains the nutrients that way). Whenever I do any baking I replace half or all of the flour called for with my whole wheat flour. If it is as good or better I add that recipe to my food storage recipe binder. It's a great way to experiment until you find what works for you.
My Recommendations

Emergency-Only Usage

If you are planning to use your food storage and wheat grinder only if an emergency situation arises, it is not worth the expense and hassle of buying and storing an electric grinder. At a minimum you should get the Back to Basics Grain Mill but I would highly recommend splurging for the Wonder Junior.
Every-Day Usage

If you plan to "store what you eat and eat what you store" I highly recommend the WonderMill Grain Mill electric grinder. If you are not planning to find an alternative power source for an emergency situation, then eventually pick up a Back to Basics Grain Mill as well. The price of these two combined are still cheaper than high-end electric grinders that have a manual crank option, and the functionality of the WonderMill is better for frequent usage.

Light and Fluffy Bread

This recipe is for a very light and airy bread. I was raised in a donut shop (no pun intended) and have baked all my life.

However, I just couldn't find or create a bread recipe to my satisfaction...one that would knock your socks off, if you know what I mean...that is until I found this one. I got this recipe from a very dear old Italian lady who was like a second mother to me when I was younger. She was always cooking and baking and feeding teenagers.

This is the bread of love that you will love.

INGREDIENTS:

2-4 LOAVES (Depending on Size of Pans)

6 cups all-purpose flour

3 rounded tablespoons sugar

1 teaspoons salt

1 packages fast-rising dry yeast

Combine the above ingredients in a mixer bowl first.

------------------------------------

3/4 cups buttermilk

1-3/4 cups water

Combine the above ingredients in a bowl or large measuring cup and heat to 125-130 degrees in the microwave to add to the mixing bowl.

Note: This amount will fit in the two medium size bread pans and one small or two large bread pans.

INSTRUCTIONS:

1. Combine the above in a Kitchen Aid or similar type of mixer bowl with a flat hook. If you don't have a mixer, you can do it by hand fairly easily.

2. Blend the ingredients with a dough hook until it all comes together. Finish it up with oiled hands, flattening it out in the bowl. You will not be kneading the dough, but just blending it until smooth. It will be a very wet and sticky dough. Don't worry about getting too much oil from your hands in the dough; it helps the final product.

3. Let the dough rise in the pot or bowl in a warm place (an oven warmed to 90-100 degrees is perfect) for 30-40 minutes or until doubled.

4. Punch the dough down and form to fit in greased baking pans, The pans should be about half full. Allow the covered dough to rise in a warm place until doubled, or the edges are to the top of the pan and the round is above the top.

5. Bake in a 350 degree oven for 20 minutes or until done.

6. Remove the bread from the baking pans immediately and let cool on a rack.

Note: To keep the bread fresh, line a big pot with a sheet, add the bread, and then cover with towels. The bread should be good for 2-3 days, but it is best eaten on the same day.This also makes great pizza dough.

Pasta Machine Dough

2 cups all purpose flour (about 350 grams) 2 large whole eggs

To prepare the mixture by hand, place the flour on a clean counter top or rolling board and make a well in the center.

Break the eggs into the well and using a fork, beat the eggs, gently drawing in flour from the sides. Continue dragging flour into the center well, stirring the ingredients together until the dough begins to form a mass.

IMPORTANT: If the pasta is too dry or crumbly, spray with a little lukewarm water. When the right texture has been reached, form a ball and leave to rest under an inverted bowl for 10-15 minutes.

If making noodles, roll out the dough using a roller pasta machine, dusting lightly with flour to prevent from sticking. Fold up and roll a second time, or continue to roll each sheet until it becomes smooth.

Once the pasta sheets begin to smooth out, decrease the roller setting by 2 numbers, and then again by 2 numbers, until the sheets are the thickness that you require for the product that you're making.

Use the pasta sheets to make ravioli, lasagna, or roll up the sheet jelly-roll fashion, and slice to desired width to make noodles (or use the cutter attachment of your machine).
You can add color to the dough by adding drops of beet juice (for red), spinach juice (for green), carrot juice for orange/yellow.

Making Pasta is fun, your kids can help, and it tastes fantastic. The manual machines are easy to use and can just attach to your countertop. Get cooking! You will feel like a gourmet chef.

How to Choose a Good Stand Mixer

I've been looking at stand mixers lately, and there's quite a lot on the market. They range from small to large, weak to powerful, white to tangerine. With so much out there, I've had to step back and figure out how to choose a good stand mixer. Obviously, it would be foolish to rely only on the look of the mixer. So after much thought and consideration, I've realized that choosing a good stand mixer required me to answer some important where, what, and how questions.

Where will it go in my kitchen?
While this might not be the first question that comes to mind when deciding how to choose a good a stand mixer, it is very important. I had to take a step back and look at my kitchen carefully.
Do I have counter space to store the mixer?
Will I need to move it forward and backward on the counter?
Will I need to keep it in a cabinet when not in use?

Some of the stand mixers on the market today are very heavy, especially the ones with larger capacities. But even the smaller ones require room to be stored and room to operate. Many stand mixers have tilt-back heads. If the mixer will be used on a counter with an overhead cabinet, there needs to be clearance to raise the head. It would be awful to choose a stand mixer that was difficult to fit or use in the kitchen space you have available.

What will I use it for?
When trying to choose a stand mixer, it's important to stop and think about the different things the stand mixer will be asked to do. In my home we use it to whip cream and butter. We make treats of granola, cakes, brownies, and cookies. But we also give it a work out with pizza dough and homemade bread. I use it for other cooking jobs too, such as mashing potatoes and mixing up ground meat dishes. As I thought about these things, I realized that an entry-line machine wouldn't last long in our house. I would be dissatisfied every time I used it and would probably wear out the motor very quickly. I also liked the idea of being able to add attachments to the mixer to widen the amount of jobs it would help me accomplish.

What about your uses for the mixer? A stand mixer that will only be used occasionally doesn't need to be very powerful. And single batches of cookies don't take much room in the mixing bowl. Take careful thought of what you will use it for when deciding how to choose a good stand mixer.

How much will I make with it?
At first glance, this may seem identical to the last question. And while it is related, it really goes a step further. I stopped to think how large the batches would need to be when I used the stand mixer. With my family, 3 dozen cookies just don't cut it (unless I want to make more in a few days!). When I make cookies I make them in large quantities and then freeze some for future treats. I never make just one pie at a time since it's gone too fast. And forget mashing a pound or two of potatoes. I make at least 6 pounds at a time. When I thought about how much I make, I realized that I needed a machine with a large capacity AND a strong enough motor to handle that work.

Thankfully, many of the mixers on the market are rated by how many cups of flour they can handle. I pulled out my recipes and began to compare what I needed to accomplish with what the machines could handle. But I did notice one very important thing. Most machines are listed according to cups of all purpose flour. If you use whole grain or bread flours like I do, the number of cups the machine can handle must be reduced to compensate for the heaviness of the flours. You definitely want to choose a good stand mixer that can handle whatever type of flour you use.

How is the machine built?
This one was very important to me and encompasses many things. I was concerned with the company's reputation and the satisfaction of the product owners. What was the warranty period and how does the company handle problems? We never like to think about bad things happening, but they sometimes do. The more I thought about machine construction, I became concerned about the type of motor used. Was it all-metal and durable? Were there belts that could wear out and break? I decided I wanted a machine that would last for many years, and a company that would stand behind that machine as well.

Once you have your polishing cream on hand, you can begin the de-gunking process. Go ahead and fill a bucket or pail with warm soapy water. Dish liquid or other nonabrasive cleaners can be used in this step. Something with a degreaser in it will be handy when it comes to getting the grease off of the stove. Now work the cleaning solution into the grain of the stainless steel and then come back at it from the other direction. This will loosen up any stuck-on residues. Dry the appliance with a dry towel.

You are now ready for the next step of the process, the rebirth of the sparkle. When you finish with drying the appliance, it will be dull. Don't be alarmed because the polishing cream you purchased will restore the shine that made you want the stainless steel in the first place. Apply the cream according to the manufacturer directions. Be sure to wipe off any excess polishing cream right away.

Now you can use another dry towel to buff the polishing cream back off. Be sure to wipe with the grain for best results. You may have to really put some elbow grease into getting it as shiny as you would like for it to be. After you know how to de-gunk stainless steel appliances and you do a good job of it, it will be easier the next time you are faced with this task.

Getting the job done right the first time should be your main concern. Don't worry if you can still see a few marks in various places on your appliances. You can always get them the next time now that you know how to do it correctly.
