Ahhh...fresh homemade tortillas. What could be better?
Those totally flat store-bought tortillas you find in the supermarket cannot compare with nice,and soft homemade tortillas made fresh in your kitchen. If you have children, you will find these disappearing as fast as you can make them.
Kitchenaid Hand Mixer
Roll these tortillas up and dip them in your food or wrap these babies around a nice Mexican pork with rice and beans or whatever else you want to put in them. Or you can do like our friends do...just slather a little butter on them while they are hot and enjoy!
20 TORTILLAS
4 cups all-purpose flour
2 teaspoons salt
2 teaspoons baking powder
1/2 cup plain olive oil (not extra virgin)

1. 1. Mix the above ingredients together in a Kitchen Aid type mixer bowl with a flat beater or do it by hand.

1-1/2 cups warm water

2. Add the water as you mix the dough on speed 2 until it comes together well.
3. Change to the dough hook and knead the dough until soft and elastic--3-5 minutes or knead it by hand.
4. Pinch off golf-ball size pieces of dough and roll them into around 20 balls. Let them rest, covered with plastic wrap, for 15 minutes.
5. Roll each of the dough pieces into about a 7" round and cook them on a hot tortilla griddle set on a burner until a bit browned, turning them over only once.
6. Place the cooked tortillas in a towel-lined basket and cover them with the towel. Eat right away or cool, then store in a plastic bag.
Here's a little trick I learned a few years back. To reheat your tortillas, wrap them in foil and place them in a 300 degree oven for 10-15 minutes (do not microwave them--it will make them rubbery). You can heat up a lot of tortillas this way and they come out nice and soft.
